"Our enology classes were not in a lab with coat, but were in boots on the field, that was one of the things that made me fall in love with my profession."
On this occasion I have an excellent Spanish winemaker who opens the doors of her life, her profession and her heart, the BIG love she has for her family is admirable.
Her Profession: ¨From last year I have the technical direction of the winery. The development that I have been directing for a few years. Our project is familiar, so even though my parents have retired, their opinion still has weight so it is not only my project.
In the future I would like to continue doing the same as now, researching, making wines of ever higher quality and knowing our vineyards well. It is a very rewarding experience to see how the grapes that have grown in a certain place can produce so much pleasure to our customers.
A perfect day in the life of Adriana Ochoa:
As for a perfect work day, I would go to the harvest time. Get up and go to the vineyard to see how the grape is and how we have been harvesting for a while. Verify that grapes are ready to be harvested and what they lack. Then, in the winery tasting new musts and wines. There is the future! It is a time of hard work, but also the most creative. This past year (2016) has been very entertaining because we have gone on to ferment our wines with our own yeasts, coming from our vineyard. I like to see how the yeasts go and see the nuances of each terroir. In vintage, I also like to taste the wines of previous vintages to compare how the harvest will be.
The time to eat, with my parents, my sister and my children. The days my husband can come becomes a party! In the afternoon, return to the winery to check that everything is fine, and then, if possible, another tour of the vineyard. It is unhurried and with the children and the dog to enjoy the moment. But normally I do not have time to do all this!
"Good company is essential for good wine tasting and to know better what you like." As for style, I have a weakness for Alphonse Mellot in Sancerre."
"This wine is one of my children and, as such, has part of me, I did it to reflect in a wine part of my philosophy and the basis of everything I do in the winery and what my generations have maintained in Its work is called Origin because it tries to reflect the love of the soil, of the land, it is made from a selection of 3 different varieties from 3 different plots with a common characteristic: the soil from which they come, in all cases, it is a precious scree that brings exquisite nuances.
